Grate a head of cauliflower or use pre-"riced" cauliflower from the grocery store.
Cover in microwave safe container and heat for 5-8 minutes until hot.
Add additional ingredients and stir, enjoy immediately.
Alternately, sautee cauliflower in pan with a tablespoon of olive oil to desired consistency and stir in additional ingredients. Serve with lean protein of your choice and additional vegetables.
